Black Garlic BBQ Ribs

Ingredients

For a 1/4 rack (about 7-8 ribs)

BBQ rub (spice marinade):

  • 1 tablespoon mustard.
  • 1 tablespoon of pulverized panela.
  • 1 tablespoon paprika.
  • 1/2 teaspoon cumin.
  • 1 teaspoon garlic powder.
  • 1 teaspoon onion powder.
  • 1 teaspoon black garlic salt or normal salt.
  • Pepper to taste.

Extras: coconut aminos, Worcestershire sauce or soy.

Step by Step

  • Mix all the ingredients and massage the ribs (thawed). Let marinate for at least 15 minutes. You can do it the night before.
  • After the marinating time has passed, preheat the oven or air fryer to 180-190 degrees.
  • Wrap the ribs in aluminum foil and bake for 10 to 15 minutes. Meanwhile you can make the barbecue sauce.

Ingredients

Home made barbecue room :

  • 1/2 cup roasted tomato base (ripe tomatoes, with 1/4 of onion, paprika, carrot and spices, baked and then blended) or crushed canned tomatoes.
  • 1 teaspoon Dijon mustard.
  • 1 teaspoon balsamic vinegar.
  • 3 cloves of black garlic , chopped.
  • 1 teaspoon coconut aminos or soy sauce.
  • 1 tablespoon honey (add after boiling).

Optional rum or dark drink (1/2 shot).

Step by Step

Place everything in a pot over low heat, stir constantly and let it boil or until it has a thick sauce-like consistency.

When your ribs are done, bathe them in this sauce and enjoy!
