Boiled egg sandwich with yogurt and black garlic

Ingredients

For 1 sandwich:

  • 2 hard-boiled eggs, peeled and diced.
  • 1 teaspoon black or white sesame seeds.
  • Salt and pepper to taste.
  • 2 slices of bread, depending on your preference.
  • 1 small handful of baby spinach or sprouts.

For the yogurt sauce (mayonnaise type):

  • 1/4 cup coconut yogurt or neutral Greek yogurt or replace with 1/2 hass avocado.
  • 1/4 teaspoon mustard.
  • 3 cloves of chopped black garlic.
  • Pinch of paprika and onion powder (optional).
  • Salt and pepper to taste.

Step by Step

  • Mix the ingredients for the yogurt sauce and let it marinate for at least 10 minutes.
  • In a bowl, mix the hard-boiled egg, mayonnaise and sesame seeds.
  • Toast the breads with a little ghee.
  • Assemble your sandwich and add baby spinach and that's it!
