Quinoa and black garlic salad

Ingredients

Ingredients for 1 serving:

  • 1/3 cup of cooked quinoa.
  • 1/3 cup of cooked chickpeas.
  • 1 handful of green leaves or arugula.
  • 4 cucumber slices cut in half.
  • 4-5 uvalina tomatoes, halved.
  • 2 cloves of black garlic, cut into small pieces.
  • Crumbing feta cheese.
  • 3 basil leaves cut. Optional: Chicken.

Vinaigrette:

  • 1 tablespoon of olive oil.
  • 1 teaspoon balsamic vinegar.
  • 1/4 teaspoon mustard.
  • Pinch of garlic powder or garlic paste.
  • 1-2 drops of Stevia or honey to taste.
  • Salt and pepper to taste.

Step by Step

Put a bed of green leaves on a plate or bowl, add the rest of the ingredients. and the vinaigrette.
